Spicy candied jalapeno's

I make this and EVERYBODY that likes hot stuff goes crazy over it and actually begs me to make them a whole batch for themselves. Be careful though this can be VERY HOT :eek: depending on how hot the jalapeno peppers are. I have made many batches and it seems like the hot factor varies with different batches of jalapenos. The fumes/steam that will come out of the pot while cooking WILL BURN YOUR EYES and ALWAYS WEAR GLOVES while slicing the peppers, my bf helped me slice the peppers once and wouldnt listen to me about the gloves and he had tiny little painful bilsters from the juice of the peppers for several days.

We enjoy this on Ritz crackers and cream cheese but goes great on anything you want to spice up :)


First process:
4 lb. fresh jalepeno peppers sliced
2 lb. onions diced
1/2 cup vinegar
1/2 cup water

second process:
6 to 8 cups sugar
2 Tbsp. mustard seed
1 tsp. turmeric
2 tsp. celery seed (optional)
1 Tbsp. garlic powder
1 tsp. ground ginger

Slice Jalapenos into thin slices and dice onions (I would suggest a pair of rubber gloves for handling jalapenos, personal experience, do not touch your face!). Place in pan with water and vinegar, bring to a boil, cover, reduce heat & simmer about 10 min or until tender. (do not breath fumes) .

Pour off most of the water vinegar mixture, add the sugar and spices bring to soft candy temperature to completely dissolve sugar about another 10 min. Place boiling mixture into jars, leaving 1/4 inch head space. Adjust caps.

I might try to cook it this weekend, I only need to find fresh jalepeno peppers.

Good Idea :) I might do that next time i make a batch. Enjoy if you find the peppers!

I made something similar. I got the recipe out of the Ball Blue book. It's actually the recipe for bread & butter pickles but I use jalapenos instead of cucumbers.

I am printing your recipe and will try this summer when I have fresh peppers from my garden!

In Spain they have something similar, although it's not candied. It's called 'Pimientos de Padrón' and they are delicious! They are small sweet peppers which are usually sautéd in good olive oil until they are browned and soft - then sprinkled with some fresh sea salt. A curious thing is that one in every 20 or so peppers (i forget the ratio) is very, very hot whilst the rest are very sweet and mild! So it's a bit like playing a game of Russian Roulette!

Here's a recipe - I realise that Padrón peppers may be difficult to find outside of Europe so you can substitute them for japapeños instead -

2 big handfuls of Padrón/ Jalapeño peppers whole with seeds removed (around 20 peppers in total)
1 cup of extra virgin olive oil
1 tablespoon of unground sea salt

Heat the olive oil in a large sauté pan and add the peppers. Cook on medium/high heat for around 10/15 minutes until the skins of the peppers have blackened slightly and the insides are soft. Remove to a serving dish and sprinkle with the salt - drizzle a few tablespoons of the pan oil over the peppers.

Serve with lots of good bread and a nice cold beer!

I am going to try the candied jalapeno recipe. I planted jalapeno plants just to make salsa and was wondering what I am going to do with the peppers because I am only going to need a couple for the salsa. I am not a spicy food liking person on a regular basis but sometimes I enjoy a little spicy. Sounds especially yummy with the cream cheese on crackers.

If anyone knows any other jalapeno recipes, I would appreciate them...especially ones that take some of the heat away.

Cut the top off and remove the seeds. Stuff with cream cheese and grill. These are very yummy and the cream cheese takes some of the heat. You can also wrap these in bacon before grilling. Or stuff with a whole cooked shrimp and cream cheese and grill.

Thanks, sounds delish! I am getting impatient now to get some jalapenos growing. I love cream cheese jalapeno poppers, never even gave it a thought to stuff and grill them. Thanks again!!
