IMO, don't "read" too much into what information you find online. I personally take the advice given here and apply it.
No one here has steered me wrong. I know you're very worried about your pup. You have every right to be. But these are people who are very knowledgeable and wouldn't steer you wrong. Some have been where you are. They know what they are talking about.
I'm not bashing you, please don't get upset with me.
As for diet, I would highly recommend raw or home cooking. Second would be a high quality kibble. IMO Wellness is the best you can get. Why not try it and just add a bit more protein? As for mites thriving on carbs, maybe they do. But if you try to get all carbs out of the diet, that would mean that even "grass munching" would be out. You'd have to watch her like a hawk.
I know you only want what's best for your pup, but you're worrying way too much. She is getting better, so just keep doing what you're doing. Just add in a bit more kibble. She needs the nutrition, and keep up with the supplements. You may be surprised.
