Turkey Leg Pot Roast
• 3 medium potatoes, peeled and quartered
• 2 cups fresh baby carrots
• 2 celery ribs, cut into 2-1/2-inch pieces
• 1 medium onion, peeled and quartered
• 3 garlic cloves, peeled and quartered
• 1/2 cup chicken broth
• 3 turkey drumsticks (about 1/2 pound each)
• 2 teaspoons seasoned salt
• 1 teaspoon dried thyme
• 1 teaspoon dried parsley flakes
• 1/4 teaspoon pepper
In a greased oval 5- or 6-qt. slow cooker, combine the first six ingredients. Place drumsticks over vegetables. Sprinkle with seasoned salt, thyme, parsley and pepper. Cover; cook on low for 5 to 5-1/2 hours or until a meat thermometer reads 180°. Yield: 3 servings.

I double this recipe since there are 6 in my family. I can get six legs to fit in my crock pot with no problem.

I am going to have to try some of the other recipes submitted.

Hot Fudge Cake
• 1-3/4 cups packed brown sugar, divided
• 1 cup all-purpose flour
• 6 tablespoons baking cocoa, divided
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup milk
• 2 tablespoons butter, melted
• 1/2 teaspoon vanilla extract
• 1-1/2 cups semisweet chocolate chips
• 1-3/4 cups boiling water
• Vanilla ice cream
In a bowl, combine 1 cup brown sugar, flour, 3 tablespoons cocoa, baking powder and salt. In another bowl, combine the milk, butter and vanilla; stir into dry ingredients just until combined. Spread evenly into a 3-qt. slow cooker coated with cooking spray. Sprinkle with chocolate chips.

I haven't tried this but it sounds delish!

Chiefsmom...I made the Meatloaf last weekend and we loved it!!! This is probably the second time in 5 years I've made Meatloaf and will make it again!! THANKS :)

I'm going to make your Mac & Cheese this weekend and probably the Broc. soup for the week...I know we'll love it

Here are a few that I came up with.

Orange Glazed Chicken Breasts

1 6-ounce can frozen orange juice concentrate, undiluted
1/2 tsp. dried rosemary
6 6-ounce chicken breast halves, skin and excess fat removed
1/4 cup water
1 onion, diced
1 clove garlic, minced
2 tablespoons cornstarch
salt and pepper to taste

Combine thawed orange juice, rosemary, onion, and garlic in a Zip-Loc Bag. Coat each breast in orange juice mixture and put in Crockpot. Sprinkle the chicken breasts with salt and pepper. Pour remaining sauce over breasts. Cover; cook on low 7-9 hours or high 4-5 hours.

Before serving, remove chicken breasts from Crockpot. Turn the Crockpot on high and cover. Mix water and cornstarch; stir into liquid into Crockpot. Place cover slightly ajar on Crockpot. Cook until thick and bubbly--15 to 30 minutes. Serve over chicken. 6 servings

This is excellent served over rice!

Mexi-Chicken and Rice

2 cups white rice
1 (28 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
3 cups hot water
1 package (1-2 ounces) taco seasoning mix
4 chicken breasts, boneless and skinless, cut in 1/2 inch cubes
2 onions, chopped
1 green pepper, chopped
1 red pepper, chopped
2 jalapeno peppers, seeded and finely chopped
1 (4 ounce) can mild diced green chilies
1/2 tsp garlic powder

In 5 quart crockpot, mix together all the ingredients. Cover and cook on Low 4-4 1/2 hours or until rice is tender and the chicken is cooked.

Swiss Chicken Casserole

6 chicken breasts (boneless/skinless)
6 slices of swiss cheese
1 can cream of mushroom soup
1/4 cup milk
2 C stuffing mix
1/2 Cup butter, melted

lightly spray crock pot with cooking spray. Place chicken in pot. Top with cheese. Combine soup and milk, stirring well. Spoon over cheese. Sprinkle with stuffing mix. Drizzle melted butter over stuffing mix. Cook on low 8-10 hrs. or high on 4-6 hrs.

6 servings.
