Thanks guys, I'm having family over this wknd, so I'll be testing out the recipes!:)

Some of my favorites:
Crockpot Italian Beef:
3-4 lb roast (any)
2 pkgs powder italian dressing mix
1 16oz jar of mild pepper rings w/ juice
1 8oz jar of mild giardiniera - drained

I put it all in the crockpot and cook on low for 8 hours. Shred beef and serve.

Mexican Chicken
5-6 boneless skinless chicken breast
1 8oz bar cream cheese
1 8oz jar of salsa - I usually use medium, but if you don't like spicy go with mild
1 can of black beans -drained and rinsed
1 can corn

I put all of it in the crockpot and cook on low for 8 hours, shred chicken and serve with rice or tortillias.

Thanks for these recipes! I only really use my crockpot to do sauerkraut and pork roast. I am going to try a few of these recipes because they would be nice and simple for my Monday and Tuesday nights in class.

I am sitting in the computer lab right now, waiting for class to start at 6 so I can get done and go home and eat, I am starving! Maybe I will run out real quick and get a sub and a coffee, hmm...

Yum!!!!! I think this might be dinner for tomorrow. It sounds healthy too if I sub in non-fat cream cheese! ;)

This was GREAT!!!!! I made it yesterday...put it over rice and it turned out yummy!!! The only thing I did different was season the chicken with Taco Seasoning mix. I didn't add the cream cheese until about 7 hours later and then cooked it an additional 1 hour. Next time I'm going to add something else to make it a little more spicey, but it was sooooo good :)
I will be trying all the other receipies on this thread too!!!

I love sauerkraut and sausage!!! This is really yummy to add to sauerkraut: boil small potatoes with salt, when they are done drain most of the water....using a hand blender, blend the potatoes in the remaining water. Then pour this all over the saurekraut / sausage and mix. :)
BTW, thanks everyone, I love the crockpot recipes and it sure helps out....especially with 5 picky eaters. :)

Beefy Stroganoff...

Yummy Roast Beef Stroganoff Recipe!!

3-4 lb Beef Roast of your choice
2 cans cream of mushroom soup
1 envelope onion soup mix
1 cup sour cream
1 large package of no yolks

Sear beef to lock in juices. Stir together cream of mushroom and onion soup mix. Add roast turn to coat with mixture. Cook on low 8 hours. Remove beef and slice. Cook noodles according to package. Drain. Add sour cream to the mushroom sauce to help thicken. Serve gravy over noodles with beef. My picky husband loves this dish!!!

And another....

Crock Pot Mac and Cheese (yummy)!

1 package elbow macaroni - (16 oz) -- cooked, drained
1 tablespoon salad oil
1 can evaporated milk - (13 oz)
1 1/2 cups milk
1 teaspoon salt
3 cups shredded sharp cheddar cheese
1/2 cup melted butter
1/2 tsp pepper (season to taste)

Lightly grease crock pot. Toss macaroni and oil. Add all remaining ingredients. Stir, cover and cook on LOW 3 to 4 hours, stirring occasionally.

I made this last night and it was AWESOME!
