I don't know about "training" them for this purpose either. Coco can be just as sweet as anything most of the time but she is very protective of us "the pack" and our home. When we're in the car with her, she doesn't like people getting too close to the car, especially if the kids are with me. I don't think Coco would allow a stranger to come into our home if we weren't there. Even if we are home and someone comes to the door, I can tell you that she will stand between us & them until she knows they're ok and we have invited them in. Once in, she is all kidney beans & kisses as long as we invited them in. I would never call them mean unless they felt they had a reason to be. I think boxer's are pretty good at evaluating a situation and acting appropriately. I have an Akita that's the same way, she can be very aggressive if she feels she's in a situation that requires her to be that way, otherwise she is just a big baby, hence her name, Babi.
