Basque Wine Cake

The following is a cake recipe that I sometimes make when having a dinner party and don't have a lot of time to invest in a dessert. It's fast, simple, very yummy and suitable for even nicer dinner parties. No one will EVER guess it came from a box!

Basque Wine Cake

1 box yellow cake mix (NOT with pudding in the mix already)
1 small package instant French Vanilla pudding mix
1/2 cup vegetable oil
4 eggs
3/4 cup sherry (cooking or drinking, doesn't matter)
1/2 cup water
1 teaspoon nutmeg

Combine all ingredients and mix at medium speed for 2 minutes. Pour into greased and lightly floured bundt pan and bake at 350 F for 45 to 50 minutes. Use a knife to loosen sides of cake and let cool in pan. While still slightly warm to the touch, remove and let cool completely. Best served with sliced fresh strawberries and/or peaches (but is great with any fresh fruit) and a little whipped cream.
 
mmmm....that sounds delicious! I love to cook--dinner parties are my favorite thing in the world...however I am NOT a baker--requires too much precision and patience for me--I like it "off the cuff" and messy! LOL This would be easy for me! :) Thanks! **and anything with a bit of alcohol is always good with me! ;)

I loooove to bake, but it can be hard when you're already doing a big meal. My friends almost fell over when I told them this was from a boxed cake mix - not just because it tastes so good, but because I do everything from scratch, right down to pie crusts. You don't have to 'fess up, though. Just stuff the boxes in the bottom of the garbage! :)

By, the way, sorry, but the alcohol bakes off. All the more reason to drink a little wine or sherry on the side! (You should see me when I do red-sauce pasta. I always use red wine in my sauce, and drinking wine is an integral part of the sauce-making process. Yeah!)
