Boxer Booster
The following is a cake recipe that I sometimes make when having a dinner party and don't have a lot of time to invest in a dessert. It's fast, simple, very yummy and suitable for even nicer dinner parties. No one will EVER guess it came from a box!
Basque Wine Cake
1 box yellow cake mix (NOT with pudding in the mix already)
1 small package instant French Vanilla pudding mix
1/2 cup vegetable oil
4 eggs
3/4 cup sherry (cooking or drinking, doesn't matter)
1/2 cup water
1 teaspoon nutmeg
Combine all ingredients and mix at medium speed for 2 minutes. Pour into greased and lightly floured bundt pan and bake at 350 F for 45 to 50 minutes. Use a knife to loosen sides of cake and let cool in pan. While still slightly warm to the touch, remove and let cool completely. Best served with sliced fresh strawberries and/or peaches (but is great with any fresh fruit) and a little whipped cream.
