The Solid Gold Holistique Blendz is kind of an allergy food, but also one that is designed for you to add meat yourself. So yes, on it's own it is a bit low in meat and protein.
On Wellness, it's generally the standard (Super5) formulas that some dogs have troubles with. The white fish formula is more of an allergy food.
But the Timberwolf is excellent. I'd certainly take one of those if you can get it nearby. Any one of those formulas would be just fine - so really just a case of pick one
As for testing chicken now - if he isn't allergic to it, it really should cause no problems at all. The need to change foods gradually really only applies to dry foods. Those of us who feed raw, for example, change meats as often as daily (within the same day, even). It does not seem to cause any issues at all - it's really a kibble phenomena.
