Need ideas for dinner STEW

It's 2pm and I am finished working for the day. Have no desire to go out since this is my first free afternoon/evening since before Thanksgiving!
I need a fairly simple idea for dinner. My ingredients are limited. Need to get to the grocery store but not today.
I have beef that could be used for a stew or stir fry but again it is 2pm and a slow 8 hour cook time is out of the question.
I have potatoes, carrots and some beef stock (out of a carton) OR I have some probably a year old stock that is frozen and I am afraid to use it!. :LOL:
I never like my stir fry as the meat tends to be a bit on the tough side (DH on the other hand loves it).
I could sear the meat and then put everything in the pressure cooker and that would cut down on time.
No onions or anything else for seasoning. Like I said...very limited on ingredients today.
Any fail proof ideas with what I have??

Cut the beef into cubes. Roll in flour and salt and pepper. Saute in hot oil. Drain. Braise the meat in the stock for a couple of hours. Add the carrots and potatoes and continue cooking until carrots and potatoes are tender. I make beef stew this way, but use tomato juice instead of stock. You could combine the stock with tomato sauce if you have it on hand. Makes for a very hearty beef stew.

Always have a couple of onions in the pantry.
