Sounds like you're doing great! Since you have to go down to two meals, it seems like it would be a good idea to give whatever veggies you're using with the morning meal, don't you think? Seems to me like the additional fiber might be helpful in giving her tummy something to do while you're out. I also agree with Gatorblu that it'd be good to start transitioning to your new plan now, while you are still able to come home during the day, so that you can check on her progress during the transition.
As to the grass, I wouldn't worry over it. Our two would eat their weight in grass if left to their own devices. For me, it's always been very clearly evident when they are doing it because of upset tummy versus just because they like it. When it's upset tummy, there's a frantic element to their behavior, and they'll generally do it until it makes them sick. When Barkley is just rolling around in the grass, grazing leisurely...I figure, knock yourself out, cookie...saves me some mowing!
Finally, try not to be too worried overall about this condition. First of all, I can't remember exactly what diagnostics you've had done, but I've learned in the past few months (through research on unrelated issues) that a true, chronic pancreatitis requires specific blood tests to diagnose, which Jordan has actually never had, despite that he's had various vets "diagnose" pancreatitis several times in the past. Vets seem to use it as an all-purpose title for upset tummy, when they probably shouldn't. You're doing all the right things for your girl, and caution is definitely in order, but I think that as long as you keep on this type of course, she's likely to be just fine in both the long and short term, with maybe an occasional bout just to keep you on your toes and make sure you appreciate her! Jordan was "diagnosed"...geez...maybe six years ago now? And I think we've been to the vet with tummy troubles maybe four times since then, at the very most. Maybe only three. So...keep up the good work, and try not to lose any sleep over this!!
