she is eating her mattress! help

Okay Emma just turned 1, so for her birthday I got her a toddler bed, and mattress. Which she loves, and never bothers, but recently I took her sheets off to clean, and then she started to take them off on her own. After a few nights in her crate and not having her bed she stopped.

Then yesterday she removed one corner of her sheet and started ripping her mattress.
Any suggestions,

Does she excercise enough during the day?
Do you leave plenty of toys in the crate?
Do you ever catch her in the act and if so, how do you react?

Oscar has done the same thing recently. I bought him a nice thick pad for his crate and he has torn open edges and tore stuffing. He never tore up his blankets so I thought he would be good. I simply fixed the torn areas and sprayed really good with bitter apple.

she exercises, all day. wheile at the sitters. there are several dogs there that she plays with, then at night i walk her 2 or 3 times.

and she staies out in her room for the most part, and she has lots of toys about 25.

not yet, but if i did i'd say "no" or " leave it" in a non playfull voice. and maybe give her one swat, with a magazine. ( i try not to spank!)
