Dog Treats- where to begin?

I'm looking for a healthy treat I can use esp for training my pup. I went to the store today and bought an organic "homemade" brand that has all natural ingredients- it looks like I coud've baked them at home. But oatmeal is the first ingredient. Do the rules that apply for choosing dog food apply to dog treats as well?
Any suggestions?

Diced Chicken Meat

We use diced chicken meat that we keep in the freezer. It's easy, nutritious and a lot cheaper than the liver treats. I feel good about giving it to him because I know exactly what it is.

Take a whole chicken, boil in water until done. Remove the chicken from the water. Take the meat off the bones, dice, I put in on cookie sheets so that I can freeze it without all the pieces sticking together, put it in the freezer for a couple of hours then transfer to a large ziploc bag and toss back in the freezer. If I happen to be in need of chicken stock, I have some old ice cube trays that I pour that into and freeze them as well. Put them in a freezer bag and I have chicken stock whenever I need it for a recipe.

Ginger's trainer recommended hot dogs. (She shows her Rottweilers and is VERY particular about what her dogs are allowed to eat.)

For Cooper we used liver treats but those can be a bit rich on a puppies tummy. We have also switched to string cheese or hot dogs they don't taste horrible if they have to go in your mouth for a correction.
