question about male dog behavior

This past weekend we took Rolen with us to visit my family. My aunt and uncle brought their female lab who was just recently spayed (she's 11 months) and she didn't really like Rolen all that much. He just wanted to play and she was asserting her dominance. My aunt took her back home, but my uncle must of still smelled like her...Rolen was doing this weird thing with his mouth, moving it up and down and drooling when he was over by my uncle. I'm assuming it had something to do with her smell, but what is the meaning of him doing this? Why do male dogs do this around the smell of a female? I appreciate the answers...I've searched, but haven't found anything! Thanks!

Was the lab spayed during or very close to a heat cycle? That's one possibility to account for it.

She's 11 months old, so she could of very well been close to her heat cycle when she was spayed. I was just curious of the meaning of the mouth moving up and down and drooling. Is it a sexual thing?
