You might try changing his food. Gas is a sign of maldigestion - something's not agreeing with his tummy (i.e. is difficult for him to digest). If you're feeding something that's high in grain content, trying something with less or no grains could be a good idea.
Poop eating is something that seems to have a variety of causes, so there's no one-size-fits-all answer (except picking it up immediately after it's produced). In some cases though, it's because the dog isn't getting enough nutrients from his food and/or there are a lot of nutrients that weren't digested still in the poop. That's most often the case with high-grain foods, because the protein in grains is only partially available to the digestive system of a canine (meaning that there's quite a lot of protein expelled in the poop). That's attractive - hence consuming it. When that's the cause, the answer can be just changing to a food with more digestible ingredients (so that there's less attractive waste).
